Keema, also known as minced meat, is a versatile ingredient that can be used to make a variety of dishes. One popular dish is Keema curry, which is a spicy Indian dish made with ground meat, onions, tomatoes, and a blend of aromatic spices. In this article, we'll share a recipe for Mattan Keema, a Kashmiri-style keema made with lamb and a blend of warming spices.

Ingredients:

1 pound ground lamb


2 tablespoons ghee (clarified butter)


1 large onion, finely chopped


2 cloves garlic, minced


1 teaspoon ground cumin


1 teaspoon ground coriander


1/2 teaspoon ground cinnamon


1/2 teaspoon ground cardamom


1/4 teaspoon ground cloves


1/4 teaspoon ground ginger


1/4 teaspoon cayenne pepper


1/4 teaspoon turmeric


Salt, to taste


1/2 cup water


Fresh cilantro, chopped, for garnish


Instructions:

Heat the ghee in a large skillet over medium-high heat.


Add the onions and garlic and sauté until the onions are translucent, about 5 minutes.


Add the ground lamb to the skillet and cook, breaking it up with a spoon, until it is browned and cooked through, about 10 minutes.


Add the cumin, coriander, cinnamon, cardamom, cloves, ginger, cayenne pepper, turmeric, and salt to the skillet and stir to combine.


Add the water to the skillet and stir to combine.


Reduce the heat to low and simmer the keema, uncovered, for about 20 minutes, stirring occasionally.


Serve the keema hot, garnished with fresh cilantro.
